I adapted this recipe from my favorite banana bread recipe of all time. I just changed the flour and added a little xanthan gum.
Ingredients:
3 ripe bananas, smashed
1/3 cup melted butter (I use Earth Balance because I am dairy free)
3/4 cup sugar
1 egg
1 teaspoon vanilla (make sure it's gluten free)
1tsp baking soda
1 pinch of salt
1 cup rice flour blend of your choice
1/2 cup teff flour
optional---chocolate chips, coconut, walnuts, or pecans
Preheat the oven to 350°F. With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Stir in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the xanthan gum and flours last, then chocolate chips or nuts if desired. Pour mixture into a greased 4x8 inch loaf pan. Bake for 50 minutes to 1 hour. Cool on a rack. Remove from pan and slice to serve.
