About 1 1/2 years into being dairy and gluten free, I started having a strong craving for cheesy italian food. I have read it takes 5 or 6 years for the cheese cravings to completely go away.
I started Googling and looking on Pinterest for more recipes, hoping to spice up my meals and make those crazy cheese cravings leave. I found recipes for herb infused olive oil that used fresh herbs and took 2-3 weeks. I didn't have fresh herbs, and I couldn't wait 2 weeks!
I made this recipe up and loved it. I literally licked the pan clean, sopping it up with bread. It tasted like I was at the Macaroni Grill having their appetizer of fresh bread dipped in olive oil!
Ingredients:
extra virgin olive oil
spices---I used dried cayenne red pepper, thyme, rosemary, oregano, and basil
1. Pour extra virgin olive oil into a small sauce pan. I honestly don't measure super closely, probably 1/4 cup per serving.
2. Begin heating olive oil on low heat.
3. Sprinkle in 1/4 teaspoon thyme, rosemary, oregano, and basil. Add a pinch of cayenne pepper.
4. Simmer oil for 5 minutes. Taste and add more spices if needed. Some people strain the oil, but I like eating the herbs mixed into the oil. Sop it up with a nice piece of crusty gluten free bread (click below for a delicious recipe). Enjoy!
